GF, Vegan Smash Cake

As I was approaching Baby B’s first fiesta (Birthday), I started looking for recipes for smash cakes that were healthy…Surprise, surprise there were not many I liked or the directions/ recipes were a mile long and not easy nor fast.

So, I came up with my own and let me tell you it was a hit! Not just did Baby B love it, but we had other party guests who eat this way and said they were delicious. I made a couple extra with the left over batter and happy I did.

So here is my recipe (note: I never measured and just went for it, so it was an eyeball measurement at best)…Feel free to tweak and play with it as well.

What you will need:

1 cup coconut flour

2 packages of the organic squeeze apple sauce from Costco

1 spoonful of melted coconut oil

1/2 cup organic coconut cream

If you are not vegan you could add one egg to help bind, but I don’t think it’s totally necessary. Add a little extra organic almond milk as need to get a nice consistency in the batter. I probably added another 1/2 cup.

325 degree and pre-heat oven, mix all together and bake for about 30-40 minutes. It will be soft to touch and crumbly, but hold it’s shape well. Slightly golden browned from baking.

I made one small cake and then the rest I put into muffin tins with no liner. Just make sure to spray with coconut oil the containers so it will slide right out after baking.

Once cooled, I made a organic powder sugar and filtered water mixture to be the frosting. Really hardly any powder sugar… I basically did this so the organic coconut flakes would stick to the top.

My baby girl and guests loved them.  Hope you do as well!
