Semi-Homemade Banana, Chia, Walnut, Vitamin Packed Muffins
So sometimes I just don’t have time to make everything from scratch. This is a great go to for a nice healthy treat, packed full with all the goodness you need when pregnant.
I start with any Banana muffin or bread mix and doctor the heck out of it. For this one, I used the Trader Joes mix and add to it the following:
3 whole Bananas mushed up (it calls for one and I like them super moist)
1 1/2 cups of walnuts chopped (I do a hard chop so there are still nice pieces of walnut)
1/2 cup of chia seeds
2 scoops of Standard Process SP Complete ( this is a wonderful supplement when pregnant or not to add to smoothies, oatmeal or muffins like in this case)
No joke these muffins are to die for! They are moist, filling and packed full of great nutrients to help grow your healthy baby. Sugar is low which is wonderful and you should try to keep your sugar intake when pregnant low & protein up. Healthy oils from the nuts and the chia seeds and then the SP Complete multi-vitamin supplement is a great add on. It has no taste so you would never know it was event there.
